This simple chicken dish is a flavorful one-pan dinner that has become a hit with my family. Garlic, thyme and oregano infuse this dish with aromas and flavors that will keep you warm on a cool fall or winter evening. What I love about this dish is its simplicity but depth of flavor. There is harmony to the combination of beans, tomatoes and herbs, along with the golden skin on the chicken, the dish just sings. Chicken with White Beans & Grape Tomatoes
Ingredients
- Chicken thighs
- Cannellini beans
- Grape tomatoes
- White wine
- Garlic Gloves
- Chili Flakes hightened heat upon request
- Fresh sprigs of thyme
- fresh oregano
Instructions
- Preheat oven to 425 degrees. Remove tinfoil lid and bake for 25-30 minutes, until chicken skin is golden brown and internal temperature has reached 165 degrees. Remove from oven and let rest for 5 minutes before serving. Suggest serving with garlic green beans or roasted broccoli which are add ons.
