White Chicken Chili with Poblano Peppers

I use both light and dark meat to give this chili a deeper flavor.

Cold nights call for warm bowls of chili. And being from the midwest, white chicken chili is a staple. If you have not learned, but soon will, I love heat in my food. And what is chili without some heat? Enter the peppers, three different peppers to be specific, sometimes four. Poblano, jalapeño, and Anaheim, and Serrano if I have it on hand. This chili is full of all the yums: chicken, cannellini beans, onions, and peppers.

White Chicken Chili with Poblano Peppers

Servings 4 Adults
Total Time 25 minutes

Ingredients

  • Shredded chicken
  • Diced onion
  • Poblano chiles
  • Jalapeno chiles
  • Ahanheim chiles
  • lemon zest and juice
  • Onions
  • Garlic cloves
  • Cannellini beans
  • Chicken broth
  • Blend of spices; cumin, coriander, salt, pepper

Instructions

  • Reheat in a large pot on stovetop for about 20 minutes. Top with either shredded cheese or a dollop of sour cream or yogurt. Suggest serving with cornbread or tortilla chips.
